I don’t have celiacs. My aunt is a chiropractor who does a lot with natural medicine, homeopathics, nutrition, etc. She had me try eliminating gluten and dairy from my diet because they trigger the immune system or cause inflammation in the body or something along those lines. I don’t have a very sophisticated understanding of it. I don’t notice very quick or dramatic results being on the diet but when I am on it I don’t have flare ups and I feel better in general. I don’t mind being on the diet because there are so many substitute foods available now that it’s not too difficult and if it’s healthy and not harmful I don’t have a problem doing it even if it’s not having a major impact on my arthritis symptoms.
